"Recipe Favorites...Lite"

For me one of the hardest things about dieting -- or changing lifestyles if you want to be politically correct -- is giving up favorite foods, especially high calorie favorites. So under this topic you'll have a chance to share recipes for foods you love from which you've found a way to cut the calories, fat or carbs. Or you can ask questions about a favorite recipe to see if anyone else has found a way to make your must-have food diet-friendly. To start you off, here's my own tip. Pizza has always seemed to me like one of life's perfect foods, unless you're trying to cut calories. To prove the point, according to Corinne T. Netzler's "The Complete Book of Food Counts" -- a necessity for the dieter, I think -- two slices of cheese pizza from Domino's contain 340 calories, 50 grams of carbs and 9.5 grams of fat. One-third of a Pizza Hut thin crust cheese pizza has 364 calories, 40 carbs and 15.5 grams of fat. Now here's what you can do at home to cut the calories, carbs and fat and still have that pizza treat. Use one flour tortilla, 2 tablespoons of pasta sauce such as Barilla's tomato-basil, and 1 oz. of Kraft part-skim mozzarella cheese. Bake for maybe 10 minutes until the cheese bubbles and you have almost instant pizza! And less than 300 calories for the whole thing, fewer than 25 carbs, and only 8 grams of fat. |

Here's another recipe, passed along by a dietician friend of mine. It's for a lower-calorie version of the apple bread pudding served in Sullivan's in A SLICE OF HEAVEN. Here's what you'll need: 6 slices of whole wheat bread, cubed, 1 apple cut into pieces (she recommends Gala, I like Granny Smith for a little tartness), 12 oz. evaporated skim milk, 1 cup skim milk, 2 eggs, 2 egg whites, 1/4 cup Splenda, 1 tsp. vanilla, 1/2 tsp. cinnamon, 1/4 cup apple juice. Here are the steps: 1. Preheat oven to 325 degrees. 2. Spray 1 1/2 quart baking dish with cooking oil 3. Place bread cubes and apple in baking dish 4. Use mixer or wire whisk to blend milks, eggs, egg whites, Splenda, vanilla and cinnamon. 5. Add apple juice and blend again. 6. Pour over bread and apple mixture. 7. Bake one hour. Yield: 6 servings. |
